Restaurant description

Massala is a unique Indian Restaurant that specialises in cooking authentic Indian cuisine using ancient Indian recipes, prepared fresh every day, using prime locally sourced produce - all to create the finest Indian dishes.

The limited choice of dishes is to ensure that each meal is freshly cooked to order ensuring the finest quality Indian food. Unlike most Indian restaurants in the UK, the dishes and breads are cooked using a special charcoal burning clay Tandoor oven. This imparts a unique taste and flavour, whilst ensuring the food remains succulent and tender.

Massala also offers a five star wine list to complement the outstanding food, created by the Massala Sommelier Maria Rodriguez, who previously worked with Gordon Ramsay and Terence Conran.

The concept of Massala was first born in India, by the team that cooked for Prince Charles and the Late Diana, Princess of Wales in 1992.

After visiting England in 2007, Head Chef Sunil decided to relocate to England and opened the first Massala in Cobham in 2009.

His passion was cooking ancient traditional Indian food, with every dish prepared and cooked fresh daily, using only the best locally sourced ingredients. He introduced to Massala some long forgotten recipes of rural India, such as Dal Makhani, which won the best signature dish 2011 at the National Curry awards in London.

As recognition of the outstanding food, wine and service, Massala was awarded the Top 30 best in Britain award for Indian restaurants in 2011, and winner of the best signature dish in 2011 for our Monkfish Malabar – try it to believe it – the complexity of herbs and spices in a sauce that whilst not hot, imparts a deep and rich fusion of flavours to create a unique taste.

Only the finest suppliers of meat, fish and vegetables are used with deliveries daily from the markets in London at Covent Garden, Smithfield and Billingsgate.

Executive chef experience and qualifications

Early reviews for Massala suggest… an unqualified hit on his hands, thanks to the exalted cooking of head chef Sunil Sinha, who trained with India’s Taj hotel group. Dishes are both skilfully rendered and infused with individual flourishes and flavours. The disc-shaped onion and potato bhajia is given depth and texture with curry leaves and crushed peanuts while the moist and aromatic murg malai chicken tikka is laced with cardamom and lemon. The jhinga merunisha – jumbo prawns marinaded in yoghurt, saffron and carom seeds – are equally arresting. Impressive mains, such as the murg tikka lababdar, with chicken tikka in a yummy sauce of fenugreek, tomato and onion, and a subtly flavoured mixed seafood curry, also leave an indelible mark of joy”
