About 50% of our seafood & fish products are supplied by Bianchi, a traditional fish dealer from Zufikon near Zurich, founded in 1881 by Italian immigrants. Bianchi is establishing a vast selection of MSC, WWF and Biosuisse certified fish and seafood products and tries to get as much sustainable produced comestibles as possible on its standard product lists. Another half is supplied by Tipesca, a local fine food dealer who has a smaller selection of certified products. And just very rarely we also get lake-fish from local fishermen.
Dellago is conscious of its responsibility to get products from certified sources, allthough it is not always possible. As a principle we declare the origin and production methods of all fish and crustaceans on our menu with a brief description and picture.
Executive chef experience and qualifications
Léon Bülow, born 1985 in Germany has started his career in a michelin star restaurant in Bremen. His first appearance at Dellago was 2005 when he joined us for a summer season. After this first engagement, Léon occasionally kept on working for us, until he took over the responsibility for the kitchen and it's crew of 6 pro's in december 2010. His first menu was a success, he reached one of the best results in terms of quality based on feedbacks of our guests.
