Fruit and vegetables come directly from Ivory Coast, Thailand and Switzerland.
Exotic meat, such as crocodile (Zimbabwe), Python (Vietnam), kangaroo and antelope (South Africa), bison (America) are selected locally by our suppliers.
All other meat is Swiss, except Lamb from New Zealand.
Executive chef experience and qualifications
The chef has worked at the Reserve in Geneva and has managed various restaurants between le Valais and Yverdon.
Close to 60, the chef brings his know how in a colourful and spicy cuisine.
In the restaurant, he is surrounded by different foreign chefs, from Madagascar, Brazil and the Antilles.
