Veal/Pork: Exclusively from central Switzerland from Companies who practise animal welfare. Our butcher knows all the producers personally.
Poultry/Rabbits: We mainly use Swiss chicken. For certain foods, we use products from South America. Specialty poultry and rabbits are sourced from France. Our supplier guarantees the animals' welfare and carefully processing.
Lamb: Our lamb comes from a certified Comestibles business. The high quality products come from New Zealand and Australia.
Beef: The Butcher Felder from Switzerland provides us with beef with matured bones. For our specialty menu he treats us with beef from Australia and South America from time to time. This is of high quality but can be treated with hormones or antibiotics.
Game: Our game comes from Austria, New Zealand and Australie. Particulary strict import controls and our suppliers provide reliable guarantee for clean products and the best quality.
Fish: Wherever possible we source fresh water fish from fishermen or from certified, controlled breeding. Marine fish and shellfish come from all oceans and reach our kitchen with minimal journey. The salmon comes from animal-friendly, controlled aqua farms on the Scottish Orkney Islands.
Eggs/Cheese: Swiss breakfast eggs are sourced from our suppliers, who vouch for the welfare of their chickens and the careful processing of the products. Four our desserts and pasta, we only use pasteurized egg products. Our goats, mountain and Alp cheese are from the Mountain Cheeserie Langbrügg in Schüpfheim in the middle of the UNESCO Biosphere.
